Esther S. McCoy, age 84, passed away on March 21, 2026, in Midvale, Utah. She was born on February 28, 1942, in Eureka, Utah, to Crespin and Lucy Saldivar.
She married Michael J. McCoy and together they had four wonderful daughters.
Esther was a beautiful and wonderful woman who welcomed and loved everyone who walked through her door. She helped raise multiple generations of children, taught anyone who wanted to learn, and made sure no one ever left hungry. She worked as a teacher at Country Day School for 27 years and was known for her silliness and her famous watermelon busts.
She was a devoted wife for 58 years to her wonderfully grumpy husband, and her family was her greatest joy. Every Thanksgiving, she made it her personal mission to bake no fewer than 13 pies with her homemade crusts. She spoiled those around her with laughter, love, and stories.
Her home was filled with memorable collections, especially her love of Elvis. Despite life’s hardships, she was always proud to have beaten breast cancer.
Esther was a daughter, wife, mother, grandmother, great-grandmother, great-great-grandmother, sister, aunt, and teacher. She will be deeply missed.
She is survived by her four daughters, Toni (Ken), Julie, Michelle, and Jody (Jeff); her sisters, Patsy (Mike), Vickie, and Linda; her brothers, Crespin, Sam, Paul, and Ray; 10 grandchildren; 17 great-grandchildren; and 3 great-great-grandchildren.
She was preceded in death by her husband, Michael J. McCoy; her parents, Crespin and Lucy Saldivar; her sister, Gloria Lucero; her brother, Marcel “Chug” Saldivar; and her special nephew, Danny Lucero.
Services will be held Saturday, March 28, 2026, at 2:30 PM at Larkin Sunset Gardens, 1950 E Dimple Dell Road (10600 S), Sandy, Utah 84092. A viewing will be held one hour prior. Graveside services will follow at Larkin Sunset Gardens.
