Paul Richard Bitter, born Jan. 26, 1947 in Chicago, IL, died suddenly on Dec. 30, 2016. A devoted husband, father, and son, Paul is survived by his loving wife, Susan Menconi, sons Nicholas, 23 and Collin, 20, mother Mary Bitter, 97, sister Mary (Tom Farrell), and brother Larry Bitter (Sally). He is preceded by his father Bernard Joseph and David, his older brother.
Paul was a semi-retired Environmental Engineer for MWH Global and was proud of the many projects he worked on. He was a Peace Corp volunteer from 1970 to 1972 in Afghanistan. Paul loved working with kids and once served as Commissioner for Avenues Baseball and continued to coach baseball. He also spent many years as a hockey coach for Salt Lake County Youth Hockey and the Utah Junior Grizzlies.
A memorial service will be held on Saturday, Jan. 7, 1-3 PM, Chase Mill at Tracy Aviary, 589 East 1300 South in Salt Lake City. In Lieu of flowers, consider a donation to Friends of Afghanistan.
